Bacon and Cheese Stuffed Pancakes

For those family mornings, nothing is better than waking up to the soft and delicate aroma of freshly prepared pancakes.   • 2 cups Tres Estrellas® flour for hot cakes, (850 grams)
  • 1 1/2 cups low-fat milk
  • 2 eggs
  • 1 tablespoon butter, melted
  • 1/4 cups bacon, fried
  • 1/4 cups Manchego cheese, grated
  • butter, for serving
  • maple syrup, for serving

  • In a bowl and using a whisk, mix the flour with the milk, eggs, and melted butter until you achieve a lump-free batter. Set aside.
  • In a skillet over low heat, add butter, pour 1/2 ladle of the previous mixture, and cook for 2 minutes; add the grated cheese, the bacon, and add a little more mixture just to finish covering the pancake. Cook for 3 minutes on each side, or until well cooked.
  • Serve and garnish with butter and maple syrup.
