Baked Eggs with Spinach

This is a delicious and simple breakfast to prepare. The eggs are cooked in a souffle mold that is filled with spinach and cream. Delicious!

1/2 onions, finely chopped
2 tablespoons unsalted butter
bunches spinach, without the branches and chopped a little
1/3 cups sour cream
1/2 teaspoons salt
1/8 teaspoons black pepper
4 eggs

Preheat the oven to 400 F (200 C)
Cook the onion in a pan together with the butter for about 5 minutes.
Add the spinach and cover the pan to cook, stirring occasionally for 2-3 minutes.
Remove the lid and allow all the liquid to drain, cooking another 2-4 minutes.
Add the cream, salt and pepper. Stir occasionally until slightly thickened, another 3-4 minutes.
Butter 4 souffle molds with a little butter.
Put spinach in each one (about half way). Make a hole in the center of the spinach and put an egg in each one.
Put in the oven and cook them for about 15 minutes until the whites are set.
