Baked Eggs with Spinach

This is a delicious and simple breakfast to prepare. The eggs are cooked in a soufflé mold filled with creamy spinach. Delicious!

  • 1/2 onions, finely chopped
  • 2 tablespoons unsalted butter
  • bunches spinach, without the stems and chopped a little
  • 1/3 cups cream
  • 1/2 teaspoons salt
  • 1/8 teaspoons black pepper
  • 4 eggs

  • Preheat the oven to 400 F (200 C)
  • Cook the onion in a pan with the butter for about 5 minutes.
  • Add the spinach and cover the pan to cook, stirring occasionally for 2-3 minutes.
  • Remove the lid and let it release all the liquid, cooking for another 2-4 minutes.
  • Add the cream, salt, and pepper. Stir occasionally until it thickens a bit, another 3-4 minutes.
  • Butter 4 soufflé molds with a little butter.
  • Put spinach in each one (about halfway). Make a hole in the center of the spinach and place an egg in each.
  • Place in the oven and cook for about 15 minutes until the egg whites are set.
