This is a delicious and simple breakfast to prepare. The eggs are cooked in a souffle mold that is filled with spinach and cream. Delicious!

Ingredients

4 portions
  • 1/2 onions, finely chopped
  • 2 tablespoons unsalted butter
  • bunches spinach, without the branches and chopped a bit
  • 1/3 cups cream
  • 1/2 teaspoons salt
  • 1/8 teaspoons black pepper
  • 4 eggs
  • 4 ramekins, (ramekins)

Preparation

Preheat oven to 400 F (200 C)
Cook the onion in a pan with the butter for about 5 minutes.
Add the spinach and cover the pan to cook, stirring occasionally for 2-3 minutes.
Remove the lid and let it release all the liquid, cooking another 2-4 minutes.
Add the cream, salt and pepper. Move occasionally until it thickens a little, another 3-4 minutes.
Enmanteque each mold with a little butter.
Put spinach in each one (about halfway). Form a hole in the center of the spinach and put an egg in each one.
Put in the oven and cook for 15 minutes until the egg whites are sewn.

TIPS

For a more intense flavor, add Parmesan cheese to the spinach before putting them in the molds.
