Baked Eggs with Spinach and Feta Cheese

This is a rich way to prepare very healthy eggs. They are cooked in a small pan in the oven along with spinach, and a little feta cheese. They are a healthy option since they only have 120 calories per serving and 5 grams of carbohydrates.

  • 1 tablespoon olive oil
  • 1/2 cups red onion, finely chopped
  • 1 teaspoon garlic, finely chopped
  • 4 cups spinach, washed and dried
  • salt
  • 1 pinch nutmeg
  • 1/4 cups feta cheese
  • 4 eggs
  • 1 pinch pepper

  • Preheat the oven to 375º F.
  • Heat the olive oil in a pan and add the onion. Cook for 3 minutes, until it is translucent. Add the garlic and cook for another 30 seconds. Finally, put the spinach and a little salt. Cook until cooked, about 30 seconds. Remove from heat and add a pinch of nutmeg.
  • Grease 4 souffle cups (or you can use cups) with olive oil. Put a spoonful of the spinach mixture in each mold and 1 tablespoon of cheese. Put 1 egg in each mold and sprinkle with a little more cheese, salt and pepper.
  • Cook in the oven for 12-14 minutes, until the egg is cooked but still stir a little. Serve immediately.
