Baked Tortilla Casserole with Egg and Turkey

  • 1 tablespoon canola oil
  • 1 cup turkey breast, natural
  • 2 pinches salt
  • 1 pinch pepper
  • 1 clove garlic, finely chopped
  • 2 tablespoons onion, finely chopped
  • 2 tablespoons fresh cilantro
  • 1 tomato
  • 2 serrano chiles
  • 4 eggs
  • 1/2 bell peppers
  • 4 tablespoons low-fat cream
  • 4 pinches salt
  • 2 pinches pepper
  • 8 tortillas

  • Preheat the oven to 190°C.
  • In a skillet over medium heat, heat the oil and fry the turkey breast. Season with salt and pepper.
  • In a medium bowl, mix the turkey breast with garlic, onion, cilantro, tomato, green chili, eggs, bell pepper, cream, salt, and pepper. Set aside.
  • Heat the tortillas and line cupcake molds to make the casseroles. Fill with the turkey mixture and bake for 20 minutes or until golden.
  • Serve immediately and accompany with salsa.
