Banana and Honey Cake

This cake recipe includes honey, mashed bananas, and chopped walnuts. Delicious when paired with coffee.

  • 2 1/4 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoons salt
  • 125 grams unsalted butter, 125 grams
  • 1/2 cups brown sugar
  • 1/2 cups honey
  • 2 eggs
  • 2 bananas, ripe, peeled, and mashed
  • 2/3 cups walnuts, chopped
  • 1 teaspoon baking powder, baking powder

  • Preheat the oven to 350 F (180 C). Grease and flour 2 rectangular cake molds.
  • In a bowl, mix the flour, baking soda, baking powder, cinnamon, and salt. In another bowl, using a mixer on medium speed, beat the butter and brown sugar until creamy. Add the honey and mix well. Add the eggs and increase the mixer speed until well combined.
  • In two parts, add the flour mixture to the egg mixture, alternating with the mashed banana mixture. Fold in the chopped walnuts.
  • Pour the mixture into two rectangular cake molds and bake for 35-40 minutes until a toothpick comes out dry.
  • Let cool completely and dust with powdered sugar.
