Basil and Dried Tomato Frittata

The Italian omelet, the frittata is a delight, made with beaten eggs, dried tomato, cheese, and basil.

  • Preheat the oven to 220 degrees Celsius.
  • In a bowl, beat the eggs and season with salt and pepper.
  • Add the tomato, cheese, and basil and mix.
  • Prepare 4 small souffle dishes, pour the frittata into the dishes.
  • Bake for 10-15 minutes or until the frittata is golden brown.
  • Remove from the oven and serve accompanied by toasted bread.
