Bean Ring

A super simple bean recipe with a very nice presentation. Ideal for a breakfast with many people.

  • 3 cups canned black refried beans
  • 3 cups canned refried black beans
  • 1 chipotle chile, in chopped adobo
  • 3/4 cups Manchego cheese, grated cheese tastes great)

  • Mix the black beans with the chipotle pepper and season with salt.
  • Grease a bundt pan with butter.
  • Add the refried black beans and press down well to cover an even layer in the mold.
  • Sprinkle a little of the grated cheese (so it melts and binds the layers).
  • Place the light beans on top and flatten well. Cover the mold with aluminum foil to prevent the beans from drying out in the oven.
  • Preheat the oven to 205 degrees.
  • Place the bundt pan with the beans over a large pyrex with a little water.
  • Put it in the oven for half an hour. Uncover after 20 minutes.
  • Unmold and sprinkle the center with the remaining grated cheese.
