Benedict Egg Sandwich

These eggs are delicious and ideal for breakfast, with their creamy hollandaise sauce and delicious poached eggs. It will be the perfect dish to start your day full of energy, surprise everyone with this recipe.

  • 3 San Juan® Egg Yolks
  • 1 tablespoon lime juice
  • 45 grams butter
  • 1 pinch salt
  • 1 pinch pepper
  • 8 cups water
  • 4 slices deli ham
  • 4 San Juan® eggs
  • butter, for spreading
  • 4 bagels
  • 2 cups spinach
  • 1 red beefsteak tomato, in slices
  • chives, finely chopped for garnish

  • For the sauce, in a bowl, place the yolks of Huevo San Juan® and place over the pot to cook them in a double boiler, add the lemon juice, continue whisking until fluffy.
  • Pour the melted butter and continue whisking until emulsified and thick like mayonnaise.
  • On a glass, place non-stick plastic, crack an Huevo San Juan® over it and tie a knot.
  • In a pot over medium heat, heat the water and place the Huevo San Juan®, cook for 3 minutes.
  • Cut the bagel in half, place a slice of ham on top, a slice of tomato, add spinach, the egg, drizzle with hollandaise sauce, and garnish with chives.
