Bolillos with Green Chilaquiles

This dish is always the most popular choice for breakfast or dinner, delicious tecolotes made with toasted bolillo with butter, spread with refried beans, topped with green chilaquiles, chicken, and melted Oaxaca cheese with a touch of onion. Incredible.

  • 4 bolillo rolls, cut in half
  • 1/4 cups butter
  • 1 cup refried beans
  • 1 cup chilaquiles, green or red
  • 1/2 cups chicken, cooked and shredded
  • 1/4 cups Oaxaca cheese, shredded
  • 1/4 cups red onion, sliced

  • Preheat the oven to 200° C.
  • On a griddle, toast the bolillos with a little butter. Remove from the griddle and spread with warm refried beans.
  • Place the chilaquiles on the bolillos, add the chicken, Oaxaca cheese, and red onion. Bake until the cheese is melted, remove from the oven and set aside.
  • Serve the bolillos on a plate, enjoy.
