1 cup spinach, cooked and not overly liquid
7 egg whites
3/4 cups Mozzarella cheese, grated
1/4 cups red bell pepper, diced
1/4 cups button mushrooms, thinly sliced
1/4 cups onion, finely chopped
salt and pepper

Preheat the oven to 180°C. Prepare your cupcake tray with the liners.
In a bowl, mix all the ingredients until well combined. Season with salt and pepper to taste.
Pour the previous mixture into the cupcake liners.
Bake for 20 to 25 minutes or until well cooked.
