Carrot Cake Hot Cakes

Prepare this recipe with homemade carrot cake, but made into hot cakes, with a unique flavor and texture; plus, they are made with Domino® Mascabado Sugar, made 100% from sugar cane and without refining processes.

  • 1 tablespoon baking powder
  • 2 tablespoons raw sugar, Domino®
  • 1/2 teaspoons salt
  • 2 tablespoons butter, melted
  • 1 1/2 cups milk
  • 1 egg
  • 1 teaspoon vanilla essence
  • 1 teaspoon cinnamon powder
  • 1/4 teaspoons ginger powder
  • 1/2 cups carrot, grated
  • 1/2 cups walnuts, finely chopped
  • 1 cup cream cheese, for the icing
  • 2 tablespoons milk, for the icing
  • 1/2 teaspoons vanilla essence, for the icing
  • 1/4 cups raw sugar, Domino®

  • In a bowl, mix the dry ingredients: flour, baking powder, Domino® Mascabado Sugar, salt, cinnamon, and ginger. Set aside.
  • In a separate bowl, mix the liquid ingredients: milk, egg, butter, and vanilla. Add the liquid ingredients to the dry ingredients until perfectly combined. Finally, add the grated carrot and walnuts. Set aside.
  • For the icing, in a bowl, mix the cream cheese, milk, vanilla, and Domino® Mascabado Sugar. Set aside.
  • In a skillet over low heat, melt the butter, pour a ladle of the hot cake mixture, cook for 3 minutes, and set aside.
  • Serve the hot cakes warm with the icing, and garnish with walnuts and grated carrot.
