Carrot Pancakes

This homemade pancake recipe includes grated carrot (like in a carrot cake).

  • 1 1/4 cups flour
  • 2 tablespoons baking powder
  • 1 tablespoon cinnamon
  • 1/4 tablespoons salt
  • 1/4 tablespoons nutmeg
  • 1/4 cups brown sugar
  • 3/4 cups whole milk
  • 1 1/2 tablespoons vanilla essence
  • 1 tablespoon vegetable oil
  • 2 eggs
  • 2 cups carrot, grated
  • 3 tablespoons butter
  • 2 tablespoons honey

  • In a bowl, mix the flour, baking powder, cinnamon, salt, and nutmeg.
  • In another deep bowl, mix 1/4 cup of brown sugar with the eggs, milk, vanilla, and oil. Pour this mixture into the flour mixture and mix with a whisk. Add the grated carrot and mix a little more.
  • Heat a large skillet and grease it with cooking spray. Using a soup ladle, place a portion (1/4 cup) in the skillet and cook for 2 minutes or until it has many bubbles, flip it, and cook for 1 more minute.
  • Repeat this with the remaining batter. Keep the pancakes warm while you finish making the rest.
  • In a separate bowl, mix the butter with the honey and serve the pancakes with this delicious mixture.
