In a bowl, mix the flour, baking powder, cinnamon, salt, and nutmeg.
In another deep bowl, mix 1/4 cup of brown sugar with the eggs, milk, vanilla, and oil. Pour this mixture into the flour mixture and mix with a whisk. Add the grated carrot and mix a little more.
Heat a large skillet and grease it with cooking spray. Using a soup ladle, place a portion (1/4 cup) in the skillet and cook for 2 minutes or until it has many bubbles, flip it, and cook for 1 more minute.
Repeat this with the remaining batter. Keep the pancakes warm while you finish making the rest.
In a separate bowl, mix the butter with the honey and serve the pancakes with this delicious mixture.
