Cheese and Spinach Omelette

Delicious and nutritious cheese omelette with spinach. It's an excellent idea for breakfast and to start the day with something that fills you with energy. This omelette is high in iron from the spinach, as well as rich in protein. Make it at home, you won't regret it.

  • 1 bunch spinach
  • 2 eggs
  • 2 tablespoons cheese, skimmed
  • 1 onion
  • 1 tablespoon parsley, chopped
  • 1 tablespoon watercress, chopped
  • 2 tablespoons cow's milk, skimmed
  • salt and pepper

  • Cut the onion into small cubes, place the chopped onion in a skillet and add one tablespoon of olive oil and one of water.
  • Add the spinach and cheese to the skillet. Salt and pepper to taste.
  • Add one tablespoon of skim milk to the eggs and beat them. Add salt and pepper to taste.
  • Add the egg mixture to the skillet where the other ingredients are.
  • Flip the omelette when the bottom starts to lift.
  • Serve on a plate and for decoration add chopped parsley and watercress.
