Chiapanean Entomatadas

Delicious and incredible Chiapanecan entomatadas to start the day and enjoy a tasty breakfast.

  • 12 corn tortillas
  • 6 tomatoes
  • 2 serrano chiles
  • 300 grams deli ham, or turkey breast
  • 12 eggs
  • 400 grams Cotija cheese, or fresh ranchero cheese or ricotta (of your choice)

  • Fry the corn tortillas in oil until golden, like a tostada.
  • Blend the tomatoes with the chili, a bit of onion and garlic, salt, and pepper, and cook for 8 to 10 minutes. (You can omit the chili if you don't like spicy food)
  • Fry the slices of ham and make sunny-side-up eggs.
  • Cover the toast with a little tomato sauce, place a slice of ham, the sunny-side-up egg, another bit of sauce, and sprinkle cotija cheese on top.
  • You can serve the toast with tomato sauce and cheese, or just with ham as you prefer. Or if you like, you can add cream.
