Chilaquiles with Cecina

  • 7 serrano chiles
  • 5 tomatillos
  • 3 cloves garlic
  • 1/2 kilos tortillas
  • 1 liter vegetable oil
  • 3 sprigs epazote
  • 1/2 onions
  • 1/2 kilos cecina

  • Boil the tomatoes with the chili. Once cooked, put them in the blender with the garlic and onion to make a sauce. Fry this sauce in a saucepan.
  • Cut the tortillas into triangles and fry them in another saucepan. Once the tortillas are fried, pour them in along with the sauce and let them simmer until thickened.
  • In a skillet, heat a little oil and fry the cecina. Once the chilaquiles are seasoned, serve them on a plate and add the cecina with cheese and cream.
