Prepare these delicious chilaquiles with chicken in a rich creamy chipotle sauce accompanied by avocado, red onion, cilantro, cream, and fresh cheese. They are ideal for breakfast or brunch. An exceptional flavor that will remind you of Mexico!
For the sauce, in a medium pot heat the oil and cook the garlic, onion, and tomatoes until they start to break down, about 20 minutes.
Add the allspice, cumin, chicken broth, cilantro, salt, and cook until reduced by half. Remove from heat.
Blend the previous preparation together with the chipotle pepper, sour cream, and cream cheese. Adjust seasoning and set aside.
Place 1 ½ cups of Northgate chilaquiles chips on each plate, add the chicken, cover with hot sauce, and serve with cream, fresh cheese, onion, avocado, and cilantro.
