Chilaquiles with Chicken in Creamy Chipotle Sauce

  • 1 tablespoon vegetable oil
  • 1 clove garlic
  • 1/2 onions, in pieces
  • 5 tomatoes, coarsely chopped
  • 3 allspice berries
  • 1/2 teaspoons cumin
  • 1 1/2 cups chicken broth
  • 1 tablespoon fresh cilantro, whole
  • salt
  • 1/4 cups chipotle chile in adobo sauce
  • 1 cup sour cream
  • 1/2 cups cream cheese
  • 6 cups Northgate® chilaquiles chips
  • 1 chicken breast, cooked and shredded

  • red onion, sliced, for decoration
  • avocado, in slices, for decoration
  • fresh cilantro, fresh, for decoration

  • For the sauce, in a medium pot heat the oil and cook the garlic, onion, and tomatoes until they start to break down, about 20 minutes.
  • Add the allspice, cumin, chicken broth, cilantro, salt, and cook until reduced by half. Remove from heat.
  • Blend the previous preparation together with the chipotle pepper, sour cream, and cream cheese. Adjust seasoning and set aside.
  • Place 1 ½ cups of Northgate chilaquiles chips on each plate, add the chicken, cover with hot sauce, and serve with cream, fresh cheese, onion, avocado, and cilantro.
