Chiposopitas with egg

Fried corn tortilla strips with butter mixed with cilantro, chipotle, and egg.

  • 8 corn tortillas
  • 1 bunch fresh cilantro
  • 2 chipotle chiles
  • 4 eggs
  • 1/5 white onions, cut into julienne

  • Cut the tortillas, chipotles, and onion into thin strips. Finely chop the cilantro.
  • Fry the tortilla strips in butter until they are lightly golden over high heat and add the chipotle and eggs. Stir.
  • Incorporate the onion immediately after removing from the heat and finally add the cilantro to maintain its freshness.
  • Serve, accompanied by refried beans in lard and strips of fresh panela cheese, preferably.
  • Obviously, add salt to taste while cooking or before serving.
