Chipotle Chilaquiles

  • Pam® Original, canola oil spray
  • 12 corn tortillas, in triangles
  • 3 tomatoes
  • 1/2 white onions
  • 1 clove garlic
  • 200 grams low-fat sour cream
  • 6 chipotle chiles
  • 180 grams cheese, for melting
  • 1 cup chicken, shredded
  • salt
  • pepper

  • Spray all the tortilla chips with PAM® Original and bake at 180°C for 15 minutes.
  • Roast the tomatoes, onion, and garlic on a griddle; blend with the chipotle pepper and strain. Spray two shots of PAM® Original in a saucepan, cook the sauce for five minutes, and season it.
  • Mix the sauce with the cream cold. In a baking dish, layer the tortillas and bathe them with the sauce, add the chicken and cheese to melt. Bake at 120°C for twenty minutes.
