Chocolate Pancakes with Strawberries

  • 1 cup amaranth flour
  • 1 cup whole-wheat flour
  • 4 tablespoons cocoa
  • 3 tablespoons monk fruit
  • 1/4 cups Greek yogurt, sugar-free
  • 1 tablespoon baking powder
  • 1 banana
  • 1 1/2 cups coconut milk
  • 1/2 cups San Juan® egg whites
  • 1 tablespoon coconut oil
  • coconut oil, for cooking the pancakes
  • strawberries, slices, for decoration
  • agave syrup, for serving

  • Blend the amaranth flour, whole wheat flour, cocoa, monk fruit, banana, coconut milk, Greek yogurt, baking powder, San Juan® Egg Whites, and coconut oil. Blend for 5 minutes or until you achieve a homogeneous mixture.
  • Melt a little coconut oil in a pan, then pour the chocolate pancake mixture using a ladle. Cook over medium heat for 5 minutes.
  • Stack the chocolate pancakes on a serving plate.
  • Top the pancakes with strawberry slices and serve with agave honey.
