Colorful Hotcakes

Colorful hotcakes are the ideal breakfast to celebrate your little ones.

  • 1 cup pancake mix, Aunt Jemima
  • 3/4 cups whole milk
  • 1 egg
  • food coloring, (red, blue, yellow, and green)
  • 1 tablespoon margarine, melted
  • 1 teaspoon vanilla essence
  • 1 cup canned pineapple, chopped
  • 1/2 cups raspberries
  • 1/2 cups blueberries
  • 1 green apple, chopped
  • chantilly cream, Lyncott

  • Mix the flour, milk, egg, margarine, and vanilla in a bowl until you have a smooth mixture free of lumps.
  • Divide the mixture into five cups. Color the mixture with orange, purple, blue, yellow, and green to create the colors of the rainbow. Tip: Red with blue to create purple, red with yellow to create orange.
  • Preheat the non-stick skillet, and once ready, pour the mixture in the center of the skillet, making a medium circle so the mixture spreads. Let them cook on low heat to avoid burning or sticking to the skillet.
  • Repeat step three with all the colors until you make 5 different colored hotcakes per person. That is 10 in total.
  • Decorate with fruits and Lyncott whipped cream.
