Corn Tamales with Cheese and Strips

  • 36 ears corn
  • 5 sticks butter
  • 2 cups sugar
  • 1 teaspoon salt
  • 6 Poblano chiles, charred and sliced into strips
  • 1/4 requesón, regional cut into strips

  • Remove some leaves from the corn and save the best ones for making the tamales. The corn is sliced and ground; you can use a mill, a grinder, or a food processor.
  • Once the corn is ground, add salt, melted butter, and sugar, and mix well. Now we have the dough ready. To prepare each tamale, place a tablespoon of this dough on a corn leaf.
  • Add 2 or 3 thin strips of chili and a strip of cheese, then fold the bottom part of the leaf and place them in a steamer pot. Cook covered over medium heat for 30 to 45 minutes, and then enjoy the warm tamales.
