This dish is a classic from France and can be served for a delicious breakfast or snack. It consists of a ham and cheese sandwich topped with béchamel sauce and a fried egg.
Prepare the sauce, melt 3 tablespoons of butter in a small pot over medium-low heat. Add the flour and mix constantly for 3 minutes (on very low heat).
Add the milk (at room temperature) and whisk over medium heat without stopping until it boils.
Reduce the heat and continue stirring for another 5 minutes until it thickens. Add salt, pepper, nutmeg, and 1/3 cup of cheese.
Once the cheese has melted, turn off the heat and set aside. Preheat the oven to high.
Pour the sauce over each of the 4 slices of bread, sprinkle with the remaining cheese.
Spread Dijon mustard on the other 4 slices of bread and add the ham. Cover the sandwiches.
Melt 1 teaspoon of butter over low heat and cook the sandwiches until golden. Set aside.
Pour sauce over each sandwich and place them in a baking dish, put in the oven for about 2-3 minutes until the sauce bubbles.
Prepare the fried eggs with 1 tablespoon of melted butter (until the yolks remain soft).
Place each egg on top of a sandwich, season with salt and pepper, and serve immediately.
