This dish is classic from France and can be served for a delicious breakfast or snack. It consists of a ham and cheese sandwich with béchamel sauce and a fried egg on top.
Prepare the sauce, melt 3 tablespoons of butter in a small saucepan over medium-low heat. Add the flour and mix without stopping for 3 minutes (with very low heat).
Add the milk (at room temperature) and beat with a balloon whisk over medium heat without stopping until it boils.
Reduce the heat and keep moving for another 5 minutes until it thickens. Add salt, pepper, nutmeg, and 1/3 cup of the cheese.
Once the cheese melts, turn off the heat and reserve. Preheat the oven on high.
Put the sauce on each of the 4 slices of bread, sprinkle with the remaining cheese.
Spread mustard dijon over the other 4 slices of bread and put the ham. Cover the sandwiches.
Melt 1 teaspoon of butter over low heat and cook the sandwiches until golden brown. Reserve.
Put sauce on each sandwich and put them in a refractory, put in the oven for 2-3 minutes until the sauce bubbles.
Prepare the fried eggs with 1 tablespoon of melted butter (until the yolks remain soft).
Put each egg on top of a sandwich season with salt and pepper and serve immediately.
