Croque Madame

This dish is classic from France and can be served for a delicious breakfast or snack. It consists of a ham and cheese sandwich with béchamel sauce and a fried egg on top.

  • 5 tablespoons butter
  • 3 tablespoons flour
  • 2 cups whole milk
  • 1/4 teaspoons salt
  • 1/8 teaspoons black pepper
  • 1 1/3 cups Gruyère cheese, grated
  • 8 slices sandwich bread
  • 4 teaspoons Dijon mustard
  • 1/4 kilos deli ham, slices
  • 4 eggs
  • 1/8 teaspoons nutmeg

  • Prepare the sauce, melt 3 tablespoons of butter in a small saucepan over medium-low heat. Add the flour and mix without stopping for 3 minutes (with very low heat).
  • Add the milk (at room temperature) and beat with a balloon whisk over medium heat without stopping until it boils.
  • Reduce the heat and keep moving for another 5 minutes until it thickens. Add salt, pepper, nutmeg, and 1/3 cup of the cheese.
  • Once the cheese melts, turn off the heat and reserve. Preheat the oven on high.
  • Put the sauce on each of the 4 slices of bread, sprinkle with the remaining cheese.
  • Spread mustard dijon over the other 4 slices of bread and put the ham. Cover the sandwiches.
  • Melt 1 teaspoon of butter over low heat and cook the sandwiches until golden brown. Reserve.
  • Put sauce on each sandwich and put them in a refractory, put in the oven for 2-3 minutes until the sauce bubbles.
  • Prepare the fried eggs with 1 tablespoon of melted butter (until the yolks remain soft).
  • Put each egg on top of a sandwich season with salt and pepper and serve immediately.
