In a small pot, add the butter and cook until melted, then add the flour all at once and cook while stirring. Add the milk, season with nutmeg, salt, and pepper, and cook until it thickens and has a sauce-like consistency. Set aside.
Spread a little butter on one slice of Oroweat® buttermilk bread and then add some béchamel sauce, a slice of gruyere cheese, ham, more béchamel sauce, cheese, and cover with another slice of bread. Repeat until you have 4 sandwiches with three layers each.
Place the sandwiches in a baking dish and cover with béchamel sauce and more cheese.
Bake for about 10 minutes or until golden. Serve immediately.
