Delicious Motuleños Eggs

These Motuleños eggs are a classic recipe from Yucatán, specifically from the town of Motul. They are very famous as they consist of a fried tortilla spread with refried beans, topped with a fried egg, grated fresh cheese, chopped ham, and blanched peas, all drizzled with a delicious tomato sauce. To complement, serve with tasty fried plantains; it's a delight.

  • 3 tomatoes, roasted
  • 2 Habanero chiles, roasted
  • 1/2 onions
  • 1 cup fresh cilantro
  • 1 pinch salt
  • 1/4 cups vegetable oil
  • 8 corn tortillas
  • 8 eggs
  • 1 cup refried black beans
  • 1/4 cups turkey deli ham, breast, cut into small cubes
  • 1/4 cups queso fresco, crumbled
  • 1/4 cups peas, blanched
  • 1 serrano chile
  • 1 plantain, sliced
  • 1 avocado, cut into cubes
  • fresh cilantro, for decoration

  • Add the tomatoes, habanero chili, white onion, and cilantro to the blender. Season to taste and blend until you achieve a homogeneous sauce.
  • Heat a pan over medium heat, add the oil, fry the tortillas without making them hard, remove, and set aside.
  • In the same pan, fry two eggs; make sure the yolk remains soft. Remove from the pan and set aside.
  • Spread the tortilla with refried beans, serve the egg, drizzle with the sauce, and sprinkle with turkey breast ham, fresh cheese, a little peas, and rings of serrano chili.
  • Decorate with the fried plantain, avocado cubes, and cilantro. Serve and enjoy.
