These motuñelos eggs are a classic Yucatecan recipe from the town of Motul, they are very famous as it is a fried tortilla spread with refried beans with a starred egg, grated fresh cheese, chopped ham and bleached peas, with a delicious tomato sauce and for To complement some delicious fried fried plantains, it is a delight.

Ingredients

4 servings
  • 3 pieces of tomato roasted
  • 2 pieces of habanero pepper roasted
  • 1/2 piece of onion
  • 1 Cup of fresh coriander
  • 1 pinch of Salt
  • 1/4 of Cup of oil
  • 8 pieces of Corn tortillas
  • 8 pieces of egg
  • 1 Cup of refried black beans
  • 1/4 of Cup of Turkey ham breast, diced
  • 1/4 of Cup of fresh cheese fallen apart
  • 1/4 of Cup of pea bleached
  • 1 piece of serrano pepper
  • 1 piece of plantain sliced
  • 1 piece of avocado cut into cubes
  • to taste of coriander to decorate

    Preparation

    Add to the blender the tomatoes, habanero pepper, white onion and cilantro. Season to your liking and blend until you obtain a homogeneous sauce.
    Heat a skillet over medium heat, add the oil, fry the tortillas without remaining hard, remove and reserve.

    Decorate with the male banana, cubes of avocado and cilantro. Serve and enjoy.
