This dish for breakfast is very popular in the center of Mexico City and consists of two delicious fried eggs on top of a corn tortilla lightly fried in oil, covered with a spicy roasted tomato sauce with serrano chili and garlic. This tasty breakfast can be accompanied by refried beans.
3 tablespoons vegetable oil, for the sauce, for the eggs, and for the tortillas
4 tortillas

1/4 cups queso fresco, for garnish
fresh cilantro, for garnish

For the sauce, heat a griddle over high heat and roast the tomatoes, along with the onion, garlic, and serrano chili until cooked and slightly charred. Set aside.
Blend the ingredients you previously roasted for 3 minutes, season with salt, and set aside.
Heat a small pot over medium heat with the oil and fry the sauce, cooking for 20 minutes or until thickened. Set aside.
Heat a skillet over medium heat with the oil and fry the tortillas, placing them on paper towels and setting aside.
In the same skillet, fry two eggs until tender, seasoning with salt and pepper. Place two tortillas on a plate, add the two eggs on top, drizzle with the sauce, sprinkle with cheese, and garnish with cilantro.
