Divorced Huarache with Egg

  • 1 cup Ground Tomatoes of Strong Origin®, for the red sauce
  • 1 clove garlic, roasted, for the red sauce
  • 1/4 cups onion, roasted, for the red sauce
  • 1/4 cups árbol chile, roasted, for the red sauce
  • 1/4 cups chicken broth, for the red sauce
  • salt
  • 1 cup tomatillo, for the green sauce
  • 2 serrano chiles, for the green sauce
  • 1/4 onions, for the green sauce
  • 1 clove garlic, for the green sauce
  • 1 cup cilantro, for the green sauce
  • 500 grams masa dough
  • 1 cup pinto beans, refried
  • 1 cup chorizo, fried
  • Cotija cheese, grated
  • 8 eggs, sunny-side up

  • Add the roasted ingredients to a blender along with Del Fuerte Origen® Ground Tomatoes, chicken broth, and salt. Blend and set aside.
  • For the green sauce: add the tomatoes, garlic, chili, cilantro, salt, and a little water. Blend and set aside.
  • Form portions of dough the size of your hand and flatten into an oval shape, then heat a griddle to medium-high and cook the huarache for 2 minutes. Flip it to cook for another 2 minutes, and finally pinch the edge with your fingers.
  • Cover each huarache with refried beans, chorizo, cheese, and 2 sunny-side up eggs. Pour red sauce on one half of the huarache and green sauce on the other half, making sure they do not mix.
