Mix the corn dough, lard, and salt in a bowl, then gradually add water until the dough is well hydrated. Form a ball and flatten it using a tortilla press and plastic to prevent sticking. Remember not to flatten too much to keep the dough a bit thick.
Place the bites on a skillet and cook over medium heat for 5 minutes, remove and place on a cutting board. Use your hands to pinch the edges, forming a border. Reserve.
Add the oil to a frying pan and fry the chorizo for 5 minutes or until golden. Then add the egg and cook for 5 minutes. Remove from heat and reserve.
Return the bites to the skillet and add the lard; let it heat for 2 minutes and add the egg with chorizo.
Serve on a flat plate, decorate with cheese and green sauce.
