Egg and Chorizo Bites

You can't miss these egg and chorizo bites; they are perfect for breakfast. Give a twist to this Veracruz recipe, it's very easy and quick to prepare.

  • 500 grams masa dough
  • 1 tablespoon lard
  • 1 tablespoon salt
  • water
  • lard
  • vegetable oil
  • 1/2 cups onion, finely chopped
  • 1 cup chorizo
  • 6 eggs, scrambled
  • cheese, grated, for decoration
  • green salsa, to accompany

  • Mix the corn dough, lard, and salt in a bowl, then gradually add water until the dough is well hydrated. Form a ball and flatten it using a tortilla press and plastic to prevent sticking. Remember not to flatten too much to keep the dough a bit thick.
  • Place the bites on a skillet and cook over medium heat for 5 minutes, remove and place on a cutting board. Use your hands to pinch the edges, forming a border. Reserve.
  • Add the oil to a frying pan and fry the chorizo for 5 minutes or until golden. Then add the egg and cook for 5 minutes. Remove from heat and reserve.
  • Return the bites to the skillet and add the lard; let it heat for 2 minutes and add the egg with chorizo.
  • Serve on a flat plate, decorate with cheese and green sauce.
