Egg and Chorizo Tacos

If you want a delicious and complete breakfast, prepare these tasty egg and chorizo tacos on corn tortillas spread with beans, accompanied by slices of serrano chili, rings of green onion, diced avocado, and green salsa. Delicious!

  • 3/4 cups Northgate® pork chorizo
  • 8 eggs
  • salt and pepper
  • 1 teaspoon vegetable oil
  • 1 cup refried beans
  • 12 Northgate® corn tortillas
  • 2 serrano chiles, sliced thin
  • 1 avocado, diced
  • 2 green onions, sliced thin
  • green salsa, for serving

  • In a skillet over medium heat, cook the Northgate pork chorizo until browned. Lightly beat the eggs and add them to the skillet, seasoning with salt and pepper, and cook until the eggs are set, stirring occasionally. Set aside.
  • Heat the beans with a teaspoon of oil for 3 minutes and season to taste.
  • In a comal over medium heat, warm the Northgate corn tortillas.
  • Assemble the tacos by spreading a bit of beans on each warm tortilla, serve the egg with chorizo, and garnish with slices of serrano chili, green onion, avocado, and green salsa.
