Take a slice of bread and make a hole with a cookie cutter.
Put a small square of butter to melt in a pan over low heat.
Place the bread in the pan.
Place an egg in the hole of the bread without breaking the yolk and let it cook for about 2 minutes, or until you can see that the part of the egg white in contact with the pan is cooked. At the same time, let the 4 slices of tomato cook in the pan.
Very carefully, flip the bread with the egg in the center. The key is to not break the yolk. Use a spatula and help yourself by tilting the pan slightly.
While the other side of the egg-bread is cooking, place the 4 slices of tomato on the already cooked side, then the slice of cheese, and finally the slice of ham on top.
Once again, with GREAT CARE, flip the egg-bread again, being careful not to break the yolk. When you flip it, the ham will be the bottom layer in direct contact with the pan.
Let it cook in the pan until the Manchego cheese melts, and it is ready to serve!
You'll know you succeeded if the yolk didn't break and remains liquid, and the cheese should be melted. A touch of chipotle sauce goes very well.
