Egg Clouds with Ham

  • 4 San Juan® eggs
  • 2 slices deli ham
  • 2 asparagus
  • salt
  • pepper

  • Preheat the oven to 180ºC
  • First, separate the egg yolks from the egg whites.
  • Whip the egg whites with chopped ham until stiff peaks form.
  • Place the whipped egg whites on a baking sheet. Make small indentations in the center to add the yolks later.
  • Bake them at about 200ºC for 4 or 5 minutes, add the yolks, and put them back in the oven for two more minutes.
  • Wrap the asparagus with the ham and grill them briefly in a pan.
