Crack the eggs into a bowl and beat with a fork. Set aside.
In a deep skillet, heat olive oil and sauté the onion along with the garlic; once they start to become shiny, add the red bell pepper, serrano chilies, and the egg, stirring constantly to combine everything, and season with salt and pepper. Lower the heat and let cook; once the egg is nearly fully cooked, add the cubes of Zwan® panela cheese, cover, and cook for 2 more minutes. Set aside.
