  • 2 cups San Juan® egg whites
  • 3 tablespoons sour cream, lower in fat
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder

  • 2 cups button mushrooms, sliced
  • 2 tablespoons guajillo chile, in strips

  • Beat the San Juan® Egg Whites in a bowl until they reach stiff peaks, add the sour cream, garlic powder, onion powder, cornstarch, season with salt and pepper, and gently fold together.
  • Grease a pan with enough olive oil, heat over medium-low heat, and pour in the egg white mixture, cover the pan, and cook for 5 minutes. Once the egg whites start to look solid, flip and cook until the desired golden color is achieved.
  • For the mushrooms: Heat a pan over medium heat, add oil, add the mushrooms, and cook for 10 minutes or until fully browned, add the guajillo chili in strips, season with salt and pepper. Remove from heat.
  • Heat a grill, griddle, or pan over high heat and brown the panela cheese on both sides.
  • Fill the egg white omelette with cheese, mushrooms, and steamed spinach. Serve with fruit and juice or your favorite breakfast sides.
