Egg with Nopales

Eggs with Nopales are a perfect breakfast since nutritionally it is a complete dish. Includes egg protein, yolk fat and nopal or cactus fiber. You can accompany it with beans and tortillas and have a stronger breakfast, but just as healthy. These eggs with nopales or cactus are the favorite of people who want to lead a healthy lifestyle. On the other hand, they are an excellent food for people suffering from diabetes or high cholesterol, they also help gastrointestinal problems and osteoporosis. The best of all is that they are very versatile and you can consume them roasted, sauteed or cooked.

  • 2 cups nopal, cut into strips
  • water
  • 1 teaspoon baking soda
  • pinches salt
  • 1 clove garlic
  • 1/2 white onions
  • 2 tablespoons vegetable oil
  • 1/2 cups onion, finely chopped
  • 8 eggs
  • 1 pinch salt
  • 1 pinch pepper
  • 2 corn tortillas
  • 1 slice avocado
  • salsa

  • Heat a pot with the water over high heat and bring to a boil, add baking soda, salt, garlic, onion and cook the nopales until they are done, strain and set aside.
  • Heat a pan over medium heat with the oil, add the onion, add the nopales and cook for 1 minute. Add the beaten eggs and season with salt and pepper. Cook until the egg is done but tender. Serve and prepare taquitos with hot corn tortillas, salsa and avocado.
