Eggs with Nopales are a perfect breakfast since nutritionally it is a complete dish. Includes egg protein, yolk fat and nopal fiber. You can accompany it with beans and tortillas and have a stronger breakfast, but just as healthy.

These eggs with nopal are the pampered of people who want to lead a healthy lifestyle. The nopal is endemic to Mexico and among its benefits are proteins, calcium, iron, vitamins A and B, potassium and fiber. On the other hand, they are an excellent food for people suffering from diabetes or high cholesterol, they also help gastrointestinal problems and osteoporosis. The best of all is that they are very versatile and you can consume them roasted, sautéed or cooked.

Ingredients

4 servings
  • 2 cups of nopal cut into strips
  • enough of Water
  • 1 teaspoonful of baking soda
  • enough of Salt
  • 1 clove of garlic
  • 1/2 piece of White onion
  • 2 spoonfuls of vegetable oil
  • 1/2 Cup of onion finely chopped
  • 8 pieces of egg
  • 1 pinch of Salt
  • 1 pinch of black pepper
  • enough of Corn tortillas
  • enough of avocado
  • enough of sauce

    Preparation

    Heat a pot with the water over high heat until it reaches a boiling point, add the baking soda, salt, garlic, onion and cook the nopales until they are cooked, strain and reserve.
    Heat a pan over medium heat with the oil, add the onion, add the nopales and cook for 1 minute. Add the beaten eggs and season with salt and pepper. Cook until the egg is cooked but tender. Serve and prepra taquitos with hot corn tortillas, salsa and avocado.

    PRESENTATION

    Serve with refried beans and accompany with fruit and juice or coffee.

    TIPS

    You can add to the egg a spoonful of sour cream to make it creamier and more sponge.
