Eggs Drowned in Tortilla

Surprise your family with a delicious breakfast of drowned eggs and our innovative recipe, as the fried egg goes inside the tortilla and is then drowned in rich red sauce. Everyone will want theirs!

  • 1/2 kilos tortillas, freshly made
  • 8 San Juan® eggs
  • vegetable oil
  • 1 tablespoon vegetable oil, for the sauce
  • 1/4 onions
  • 6 tomatoes
  • 1 cuaresmeño chile
  • 1 clove garlic
  • 1 cup chicken broth
  • 1 tablespoon salt
  • 1/2 cups refried beans
  • parsley, chopped
  • sandwich bread, toasted and in triangles

  • In a pot with oil, fry the onion, garlic, tomato, and cuaresmeño pepper for 5 minutes. Add the chicken broth and let it cook for 5 minutes. Blend everything together and season with salt.
  • Place the tortillas on a board and use a knife to separate the two sides of the tortilla, leaving half of the tortilla closed. Add a tablespoon of beans and a piece of Huevo San Juan®.
  • Fry the filled tortilla in enough oil for 5 minutes or until the Huevo San Juan® is cooked.
  • Serve the fried tortilla on a deep plate and drizzle with the red sauce. Garnish with parsley and accompany with toasted bread.
