Roast the tomatoes, serrano chili, onion, and garlic on a griddle until all ingredients are browned on both sides.
Blend the ingredients with a cup of chicken broth until the green sauce is smooth. Set aside.
Heat the oil in a skillet over medium heat, sauté the onion until slightly browned, and add the pieces of Huevo San Juan®. Season the eggs with salt and pepper, cook for 3 minutes without stopping to stir, pour in the sauce and cook for 2 more minutes. Add the cilantro leaves.
Serve the eggs in green sauce with refried beans, tortillas, and coffee from the pot.
