Eggs in Green Sauce

This is a delicious, economical, and easy-to-make breakfast! Get to work and prepare these eggs in green sauce to start your day with a very Mexican dish. Don't forget to serve with pot beans and corn tortillas.

  • 8 tomatillos
  • 4 serrano chiles
  • 1/2 onions
  • 1 clove garlic
  • 1/2 cups chicken broth
  • vegetable oil
  • 1/2 cups onion, in strips
  • 3 San Juan® eggs
  • salt
  • pepper
  • cilantro, for decoration
  • refried beans, for accompaniment
  • corn tortillas, for accompaniment

  • Roast the tomatoes, serrano chili, onion, and garlic on a griddle until all ingredients are browned on both sides.
  • Blend the ingredients with a cup of chicken broth until the green sauce is smooth. Set aside.
  • Heat the oil in a skillet over medium heat, sauté the onion until slightly browned, and add the pieces of Huevo San Juan®. Season the eggs with salt and pepper, cook for 3 minutes without stopping to stir, pour in the sauce and cook for 2 more minutes. Add the cilantro leaves.
  • Serve the eggs in green sauce with refried beans, tortillas, and coffee from the pot.
