Eggs Poached in Bean Sauce

  • 2 cups black beans, cooked and with broth, for the bean sauce
  • 1 clove garlic, roasted for the bean sauce
  • 1/4 onions, roasted for the bean sauce
  • 1 avocado leaves, for the bean sauce
  • 1 tablespoon vegetable oil, for the bean sauce
  • 1 cube Knorr® granulated chicken bouillon, for the bean sauce
  • 1 tablespoon vegetable oil, for the fried egg
  • 4 eggs, for the fried egg
  • 1 cup nopal, cooked and diced, for garnish
  • 1/2 cups onion, finely chopped, for garnish
  • 1/2 cups tomato, finely chopped, for garnish
  • 1/4 cups cilantro, finely chopped, for garnish
  • queso fresco, diced, for garnish

  • Blend the beans with the garlic, onion, and avocado leaf.
  • In a medium saucepan, heat the oil and fry the sauce you blended in the previous step; once it starts to boil, add the Knorr® chicken broth cube, cook for 10 minutes, and set aside.
  • In a skillet, heat the oil over medium heat, crack an egg, and cook for 3 minutes. Remove from heat and set aside.
  • On a plate, serve the bean sauce, then place the fried egg on top and garnish with cooked nopales, onion, tomato, cilantro, and fresh cheese.
