Heat 4 tablespoons of vegetable oil in a skillet over medium heat. Cut the plantain into slices and fry until golden brown on both sides. Remove from heat and pat dry with paper towels.
In 2 large skillets, heat 1 tablespoon of vegetable oil in each one and cook the 8 eggs (4 in each pan) crushed for approx. 5 minutes or until the whites are cooked but the yolk is still medium soft.
In a comal heat the tortillas and place 1 tortilla on each plate.
In another pan, heat the refried beans.
In a hot pot the mole.
Assemble each plate by putting 1 tortilla, then a light layer of beans, then 2 eggs, then 1/2 cup of mole poblano sauce and decorate the plate with 3-4 slices of plantain.
