Heat 4 tablespoons of vegetable oil in a skillet over medium heat. Slice the plantain and fry until golden brown on both sides. Remove from heat and dry with paper towels.
In 2 large skillets, heat 1 tablespoon of vegetable oil in each and cook the 8 eggs (4 in each skillet) sunny-side up for about 5 minutes or until the whites are cooked but the yolk remains slightly soft.
On a griddle, warm the tortillas and place 1 tortilla on each plate.
In another skillet, heat the refried beans.
In a pot, heat the mole.
Assemble each plate by placing 1 tortilla, then a light layer of beans, then 2 eggs, then 1/2 cup of mole poblano sauce, and decorate the dish with 3-4 slices of plantain.
