Heat 4 tablespoons of vegetable oil in a skillet over medium heat. Slice the plantain and fry until golden brown on both sides. Remove from heat and dry with paper towels. In 2 large skillets, heat 1 tablespoon of vegetable oil in each and cook the 8 eggs (4 in each skillet) sunny-side up for about 5 minutes or until the whites are cooked but the yolk remains slightly soft.
