Preparation
Heat 4 tablespoons of vegetable oil in a pan over medium heat. Cut the plantain into slices and cool until golden brown on both sides. Remove from heat and dry with paper towels.
In 2 large pans heat 1 tablespoon of vegetable oil in each and cook the 8 eggs (4 in each pan) crashed for approx. 5 minutes or until the whites are cooked but the yolk remains medium soft.
In a hot comal the tortillas and place 1 tortilla in each dish.
In another pan heat the refried beans.
In a hot pot the mole.
Assemble each dish with 1 tortilla, then a light layer of beans, then 2 eggs, then 1/2 cup of poblano mole sauce and decorate the dish with 3-4 slices of plantain.
