Casserole Eggs with Guajillo Chile Sauce and FAGE Total® 0% Yogurt

This recipe is the perfect combination of a typical Mexican breakfast and FAGE Total® 0% Greek Yogurt. Easy, delicious, and nutritious.

  • 1 tablespoon FAGE® Total 0% greek style yogurt
  • 1 clove garlic
  • 1/4 onions
  • 3 tomatoes
  • 1 tablespoon vegetable oil
  • 2 guajillo chiles
  • 4 eggs
  • 150 chorizos
  • 1 bunch fresh cilantro
  • salt
  • pepper

  • Boil the tomatoes in boiling water for 5 minutes.
  • Cut the stem and remove the vein from the chiles.
  • Soak the chiles in boiling water for 5 minutes.
  • Blend the tomatoes, onion, garlic clove, and guajillo chiles.
  • Sauté the sauce in a pot with oil and season to taste.
  • Grease the casseroles with a little oil, break two eggs in each one.
  • Pour 2 ladles of sauce into each casserole. Chop the chorizo into small pieces and place some on top of each casserole.
  • Bake at 180°C for 15 minutes or until the yolk is fully cooked.
  • Remove from the oven and place a tablespoon of Fage® Total 0% Greek Yogurt in each casserole to enjoy a typical Mexican breakfast.
