Egg White and Vegetable Stuffed Peppers

Egg white and vegetable stuffed peppers are the perfect food to start your day; it's a very healthy recipe and provides a good portion of protein.

  • 1 cup San Juan® egg whites
  • 1 cup white button mushrooms
  • 1 onion, Small
  • 3 cups spinach
  • 5 bell peppers
  • 2 tablespoons olive oil
  • 1 teaspoon Italian seasoning
  • salt

  • Cut the onion into small cubes. Slice the mushrooms and chop the spinach.
  • Cut the tops off the bell peppers to remove the lids (keep them). Clean the inside of the peppers very well. Brush the outside of the bell peppers with olive oil.
  • Add olive oil to a skillet and sauté the onion; once it is transparent, add the mushrooms and spinach. Cook for 5 minutes.
  • Once the previous mixture is cool, place it in a bowl and add the egg whites. To this mixture, add salt, pepper, and the Italian spice blend. Whisk very well.
  • Place the peppers on a previously greased baking tray. Using a ladle, pour the egg white mixture into the peppers. Bake them for 30 minutes at 180 degrees.
