This recipe is great for a quick breakfast, everything is made in one skillet and goes into the oven to have delicious fried eggs with bacon and potatoes, you will surely love it!
In a large skillet, heat the butter and oil. Fry the onion until it is transparent.
Add the grated potato and cook for 4 minutes until it takes on color. Then fry the bacon until it is cooked but not too crispy, season. Remove excess fat.
With the help of a spoon, make space for the eggs by creating a little hole in each corner of the skillet. Place each egg in each space and sprinkle cheese on top.
Bake for 7 minutes or until the eggs are cooked but the yolk is still tender.
Remove from the oven, garnish with chopped parsley and serve immediately.
