Fried Eggs with Hashbrown Potatoes and Bacon

This recipe is great for a quick breakfast, everything is made in one skillet and goes into the oven to have delicious fried eggs with bacon and potatoes, you will surely love it!

  • 1 tablespoon butter
  • 2 tablespoons vegetable oil
  • 1/4 onions, finely chopped
  • 4 potatoes, peeled and grated
  • 8 slices smoked bacon, cut into cubes
  • 1 pinch salt
  • 1 pinch pepper
  • 4 eggs
  • 1/4 cups cheddar cheese, grated
  • 1 teaspoon parsley, Chopped, for garnish

  • Preheat the oven to 180°C.
  • In a large skillet, heat the butter and oil. Fry the onion until it is transparent.
  • Add the grated potato and cook for 4 minutes until it takes on color. Then fry the bacon until it is cooked but not too crispy, season. Remove excess fat.
  • With the help of a spoon, make space for the eggs by creating a little hole in each corner of the skillet. Place each egg in each space and sprinkle cheese on top.
  • Bake for 7 minutes or until the eggs are cooked but the yolk is still tender.
  • Remove from the oven, garnish with chopped parsley and serve immediately.
