For a special occasion, when you want to show off at a breakfast, make these eggs poached with goat cheese, you can use organic eggs or a little spinach to vary the flavor.

4 tablespoons sour cream
100 grams goat cheese, cut into 4 slices
5 sprigs fresh chives, chopped to decorate

Preheat the oven to 150 ° C.
Grease 4 individual soufflé molds. Put 1 tablespoon of cream in each one, salpiment and break 1 egg in each mold.
Place a slice of cheese on each egg. Add pepper.
Put the molds in a refractory, fill the refractory halfway with boiling water.
Bake for 10 minutes. Decorate with the scallion, serve right away.
