Spanish Broken Eggs

  • 6 potatoes, cut into strips
  • 1 kilo Spanish chorizo
  • 6 eggs
  • salt, to taste
  • 8 tablespoons extra virgin olive oil
  • 3 tablespoons fresh parsley, chopped
  • 1 can bell pepper, piquillo or bell

  • Fry sliced potatoes in extra virgin olive oil, peeled and cut into long strips. Sauté the potatoes over low heat until they are soft and lightly golden, being careful not to overcook them. Add sliced chorizo and fry everything for 3 to 5 minutes, then remove from heat.
  • Let the potatoes drain to remove excess fat.
  • In another pan, pour two tablespoons of oil over high heat, add the eggs one by one, cracking them open, and let them sit for a few minutes until you achieve your desired doneness, ideally leaving the yolk runny. Sprinkle a pinch of salt.
  • Finally, arrange the potatoes on a flat plate, top with chorizo, and finish with the fried eggs.
  • Garnish with piquillo peppers or canned bell peppers, cut into strips. Sprinkle a little chopped parsley.
  • The dish is ready to be served.
