The recipe for Spanish broken eggs is a classic in Mediterranean cuisine, they are delicious eggs accompanied by chorizo ​​and potatoes, being a perfect recipe to start the day with an exquisite breakfast.

Ingredients

6 portions
  • 6 white potatoes, cut into strips
  • 1 kilo Spanish chorizo sausage
  • 6 eggs
  • salt, to taste
  • 8 tablespoons extra virgin olive oil
  • 3 tablespoons fresh parsley, chopped
  • 1 can bell pepper, piquillo or morrón

Preparation

Fry in extra virgin olive oil potatoes cut into elongated strips, without peel. Sauté the potatoes in a slow fire until they are smooth, barely browned, take care not to overcook them. Add sliced ​​chorizo ​​and fry everything for 3 to 5 minutes and remove from heat.
Let the potatoes drain to remove excess fat.
In another pan, pour two tablespoons of oil over high heat, add the eggs, one by one crashing them, leave for a few minutes until you get the term you want, the ideal is to leave them with the tender yolk. Sprinkle a pinch of salt.
Finally, mount the potatoes on a flat plate, on top of the chorizo ​​and finally the crashed eggs.
Garnish with piquillo peppers or canned red peppers, cut into strips. Sprinkle a little chopped parsley.
The plate is ready to be served.

TIPS
