Cook the sliced onion and diced bacon until the onion caramelizes and the bacon is crispy.
Roll out the puff pastry and trim the edges to form an exact square. Cut the square into 4 parts and with the remaining dough, form a border on top of each square; this will serve as walls to contain the filling inside.
Prick the center of each square with a fork and place them on a baking sheet lined with parchment paper.
Place the crumbled feta cheese on top along with the crispy bacon and caramelized onions.
Separate the egg white from the yolk of one of the eggs and mix with the milk. Brush the edges of each square. Bake at 180°C for 12 minutes or until the edges rise.
