2 egg whites
1 clove garlic, small
300 grams fresh spinach, washed and disinfected
1 teaspoon vegetable oil
30 grams Manchego cheese, grated
1/2 teaspoons toasted sesame seeds
salt, to taste
pepper, to taste

Whisk the egg whites until they are slightly frothy and season with salt and pepper.
Finely chop the garlic and cut the spinach.
Sauté the garlic in a teaspoon of oil, add the spinach, and cook on low heat for 2 minutes. Stir-fry and remove from heat.
Pour the egg whites to form a tortilla. Cook for 1 minute and flip. Cook the other side for 1 more minute.
Place some of the spinach mixture on the egg tortilla. Sprinkle the cheese and fold it like a quesadilla.
Remove from heat and serve, sprinkling with sesame seeds.
