Spinach and Ham Rolls in Chipotle Sauce

  • 1/4 cups chipotle chile, for the sauce
  • 1 cup light milk, for the sauce
  • 1/2 cups low-fat sour cream, for the sauce
  • 1 tablespoon fresh cilantro, for the sauce
  • 2 tablespoons olive oil, one for the sauce
  • 1/4 cups onion, finely chopped
  • 1/2 cups turkey deli ham, diced
  • 1/4 cups tomato, diced
  • 1/4 cups corn kernels
  • 1/4 cups green bell pepper, diced
  • 2 cups requesón, for the filling
  • 1 1/2 cups San Juan® egg whites, for the omelette
  • 2 tablespoons low-fat sour cream, for the omelette
  • 1 tablespoon green onion stalks, finely chopped, for the omelette

  • For the sauce, blend the chipotle pepper with the milk, sour cream, and cilantro.
  • Heat one tablespoon of olive oil in a pot over medium heat, pour in the chipotle sauce, and cook for 10 minutes or until thickened. Season with salt and pepper.
  • For the filling, heat one tablespoon of olive oil in a skillet over medium heat and cook the onion, ham, tomato, corn kernels, and bell pepper. Add the ricotta and season with salt and pepper. Set aside.
  • For the omelette, in a bowl, beat the San Juan® egg whites with the cream, green onion tops, and season with salt and pepper.
  • In a skillet over medium heat, spray a little cooking spray and pour in some egg white mixture to form an omelette. Cook for 5 minutes or until well done.
  • Fill the omelette by placing some spinach leaves and the ricotta filling. Roll it up and place it on the plate, drench with chipotle sauce, and garnish with fresh oregano.
