Spinach and Ham Rolls in Chipotle Sauce

  • 1/4 cups chipotle chile, for the sauce
  • 1 cup light milk, for the sauce
  • 1/2 cups low-fat sour cream, for the sauce
  • 1 tablespoon fresh cilantro, for the sauce
  • 2 tablespoons olive oil, one for the sauce
  • 1/4 cups onion, finely chopped
  • 1/2 cups turkey deli ham, cut into cubes
  • 1/4 cups tomato, cut into cubes
  • 1/4 cups corn kernels
  • 1/4 cups green bell pepper, cut into cubes
  • 2 cups requesón, for the filling
  • 1 1/2 cups San Juan® egg whites, for the omelette
  • 2 tablespoons low-fat sour cream, for the omelette
  • 1 tablespoon green onion stalks, finely chopped, for the omelette

  • For the sauce, liquefy chipotle chili with milk, sour cream and cilantro.
  • Heat a tablespoon of olive oil in a pot over medium heat, pour the chipotle sauce and cook for 10 minutes or until thick. Season with salt and pepper.
  • For the filling, heat a spoonful of olive oil in a pan over medium heat and cook the onion, ham, tomato, corn kernels and pepper. Add the cottage cheese and season with salt and pepper. Reservation.
  • For the omelette, in a bowl beat the egg whites of San Juan® with the cream, the onion rings, season with salt and pepper.
  • In a frying pan over medium heat, sprinkle with a little spray and pour a little whisk mixture forming an omelette. Cook for 5 minutes or until well cooked.
  • Fill the omelette with some spinach leaves and stuffed with cottage cheese. Roll and place on the plate, bathe with the chipotle sauce and decorate with fresh oregano.
